Tuna/Salmon Salad Recipe

Ingredients: serves 2
1 can wild caught albacore tuna or pink salmon, drained (ie. Wild Planet or Natural Sea)
2 tsp. olive oil
1-2 Tbsp. of lemon or lime juice
¼ C. fresh herbs, chopped (parsley, dill, basil, cilantro)
2 Tbsp. red onion, green onion, chive, or 1 small clove of garlic
Salt and pepper to taste

Optional additions:
Diced avocado, celery, fennel, hard boiled egg, cucumber, great northern beans, capers, garbanzo beans chopped red pepper, organic mustard

Combine all ingredients together and enjoy!

Serving Suggestions:
Serve over a salad of arugula, tomato, zucchini and other vegetables of choice, or as a stuffing for a half an avocado, bell pepper, or cucumber!

Option to cook fresh wild caught salmon or tuna, flake with a fork, and mix with additional ingredients as outlined above.
