Sun-dried Tomato Turkey Burgers

Ingredients: serves 4
3 Tbsp. sun-dried tomatoes
1 tsp. extra virgin olive oil
1 lb. organic ground turkey meat
1 Tbsp. balsamic vinegar (optional)
2-3 Tbsp. fresh basil, parsley, or mint chopped OR 2 tsp. thyme, rosemary, or sage chopped
1 Tbsp. garlic, minced OR 3 green onions, chopped
1 ½ tsp. Dijon mustard or 1 tsp. mustard powder
1 pinch of Himalayan sea salt
1 pinch of black pepper

Directions:
Cover the sun-dried tomatoes in warm water and soak until soft (about 10 minutes). Drain and chop the tomatoes into small pieces. Combine with the remaining ingredients to form 4 patties. Grill, pan-sear, or bake in the oven at 375°F until done (about 8 minutes). Serve over a large salad or with roasted vegetables and sweet potato wedges for a complete meal.
