Fish Cakes

Ingredients:

1 whole potato (white or sweet), boiled and mashed

3 oz. wild-caught Albacore tuna or salmon, Wild Planet

1/8 C. leek, shallot, onion or chives Finely chopped

4 Tbsp. flat leaf parsley, Finely chopped

1/2 whole raw carrot or celery, grated or finely chopped

1 whole egg, flax egg, or chia egg (*optional, patty’s will still hold together)

2 Tbsp. lemon or other citrus juice , From a fresh lemon

1/2 tsp. herbs or spices of choice (red pepper flakes, Italian herb blend, oregano, dill )

1 Tbsp. of cooking fat (organic coconut oil, olive oil, or ghee) for cooking

Celtic sea salt to taste

Directions:

Cook your potato, mash, and set aside.  Combine all of your ingredients with a fork until well combined.  Shape into patties (about 2-3 patties total).  Cook the patties in a hot pan with coconut oil.  Wait for the sides to brown a bit, about five minutes on medium high heat.  Flip and pan fry on the other side for an additional three to five minutes.

Serving Recommendations:

Enjoy for breakfast as a base for an over easy egg and sautéed vegetable, for lunch on top of fresh salad greens, or for dinner with a side of roasted vegetables!
