Morning Quinoa Bowl

Ingredients: serves 2
½ C. uncooked quinoa
1 C. non-dairy milk
1-2 sticks of cinnamon or 1 tsp. warming spice (ie. nutmeg, cardamom, pie spice)
1/8 tsp. Himalayan sea salt
½ scraped Madagascar Vanilla bean or ½ tsp. organic vanilla powder or extract, optional

In a saucepan, combine uncooked quinoa and nondairy milk and remaining ingredients. Bring to a boil, cover, and simmer for 20-25 minutes. Remove from heat and allow to sit covered for 5 additional minutes, fluff with a fork and serve with additional toppings .

Nuts, seeds, and plant based fats (1-2 Tbsp seeds + 2 Tbsp. nuts) : hemp, chia, flax, walnuts, pecans, pumpkin seeds, nut butter, coconut butter or coconut oil (1 tsp.) etc.
Fruit (1/2 C.) : berries, pomegranate, sliced banana, fig, apricot etc.
Dried fruit( 1-2 Tbsp./serving): dates, mullberries, goji berries, etc.
