This Quinoa Salmon Burger Recipe combines two healthy ingredients and makes one nourishing, delicious dish.
Ingredients: serves 4
1 lb. raw wild salmon, skinned and deboned
1 C. cooked quinoa
3-4 green onions, ends trimmed
1 large handful fresh cilantro
1- 2 tsp. lemon zest (optional, for phase 3)
1 tsp. Herbamare or dried herbs or alternatively 1-2 tbsp fresh chopped (optional)
Freshly ground black pepper
Using a food processor fitted with the “s” blade, process the green onions, cilantro, lemon zest, and herbs, and black pepper until it is finely minced. Add the salmon and quinoa and process again until desired consistency. Form into patties place 3 at a time in a skillet over medium to medium-high heat with 1 Tbsp. or so of coconut oil ~2 to 3 minutes per side to cook on a hot pan. Serve over fresh greens or sautéed vegetables.
