Egg & Vegetable Scramble

Ingredients: serves 1
2 organic pastured eggs, beaten
¼ C. broccoli, chopped
2-4 tbsp. bell peppers, zucchini, or summer squash, diced
½ C. mixed greens (kale, spinach, collards etc.), thinly sliced
1 tsp. coconut oil or olive oil (to sauté)

Directions:

Combine vegetables and olive oil over medium heat, saute until cooked. Add eggs and scramble together until cooked.

Notes:
Eggs can be a quick and convenient meal option for breakfast, lunch, or dinner. Option to add additional protein (ie. smoked salmon, leftover pulled chicken, or breakfast sausage) and serve wiht a side salad or fresh berries.
