Simple Bean Salad

Ingredients: Serves 3- 4
2 C. black beans or organic edamame
1 red pepper, diced
1 yellow or green pepper, diced
¼-½ C. diced red onion or scallions
1 C. cherry tomatoes, optional
1/4 C. olive oil
1 Tbsp. lemon juice, lime juice, or apple cider vinegar
2 tsp. ground cumin

Directions:
Combine all ingredients and chill for an hour before serving

Serving Suggestions Option to serve as a meal over 1-2 C. of greens or enjoy a half portion as a side or snack.

Notes: A bean salad is great to make ahead at the start of the week to eat off of for lunches and sides for dinner. They are also great dish to bring along to a party!
