1 cup quinoa, rinsed well
1 cup unsweetened almond milk
1 ¼ cup unsweetened coconut milk
½ cup fresh blueberries
coconut yogurt or coconut milk cream to taste
optional: honey or coconut nectar to taste
In a saucepan, combine the quinoa, coconut milk, and blueberries. Bring the mixture to a boil, then lower the heat and simmer for 30 minutes, or until it is very tender. Serve the cereal warm with coconut yogurt or coconut milk cream and a drizzle of sweetener for a treat.
